Our early attempts to raise livestock for the kitchen table failed as we became too fond of the animals. This changed our path and led us towards vegetarian and vegan cooking, an ethical choice, which gave our chef Chiara the scope to explore and express her outstanding talents. Her recipes are based on traditional Umbrian dishes and Mediterranean cuisine. When combined with our own agricultural produce the results are outstanding.
