PeR is a 7 hectare farm based on the principles of permaculture with the aim of saving resouces, even to the extent of what is served at the table!
It is the headquarters of the Slow Food® Presidio (movement) of ‘Fava Cottur del Amerino’ where over 50% of the food served comes from its own production and the remainder from regional crops no more than 40km away from PeR. We serve mainly vegan-vegetarian cuisine.
Our Sicilian Chef, Chiara ,creatively revisits the ‘typical’ dishes of the region, using only organic ingredients and her wine choices are regional wines from ancient cultivars free from pesticides and chemical fertilizers.
